Christian Owen, our Memphis Editor, recently shared several variations for this summer favorite, potato salad. If you can’t find one you like among these choices, there’s no hope! (They’re all wonderful, for the record.)
Asian Summer Salad
This is a summer staple for SB Co-Founder Liza Graves and her family. It’s delicious and feeds an army, and leftovers can be converted into some other recipe options, too.
Zucchini and Avocado Salad
From Atlanta Editor Katherine Snell, here’s a fun alternative for potato salad that is great for picnics, as there are no ingredients that can spoil in the heat. (It’s also Paleo-friendly, as an added bonus, if you’re post-vacation and wanting to eat clean food!)
4th of July Sides
Louisville Editor Heidi Potter makes these yummy sides each July 4th–refreshing Watermelon Salad, a warm Zucchini and Corn Saute and a crowd-pleasing Cherry Tomato and Tortellini Salad. Yum!
