In recent years, caviar has shifted gradually from “rare indulgence” to “occasional treat.” While the full caviar service at a fine dining establishment may still break the bank for a lot of us, it’s not uncommon to see caviar bumps on happy hour menus or an open caviar tin on ice at a house party. And if you’re on the bandwagon, we’ve got good news: There are several high-quality caviar brands produced right here in the South.
Marshallberg Farm | North Carolina

Founded in 2010 by former geophysics professor, Dr. I.J. Won, Marshallberg Farm is the largest producer of Osetra caviar in the United States. Now a family operation, the business boasts two state-of-the-art indoor aquaculture farms in North Carolina, celebrated for their sustainable practices — one on the central coast and one in western North Carolina.
Osetra caviar is a prized roe sourced from Russian sturgeon. Marshallberg’s offerings include several varieties ranging in price, from $85 Traditional “Everyday” Osetra Caviar to $220 for the rare Gold Reserve Osetra Caviar. Founded by Mike Kelley in 1988 and still family-owned and operated today, Kelley’s Katch offers high-quality, sustainable caviar from its Savannah, TN, outpost.
The specialty at Kelley’s is American paddlefish roe (sourced from Tennessee freshwater), but they also offer hackleback caviar (from freshwater habitats in the Mississippi River basin), white sturgeon caviar (from Northern California), and smoked salmon. At the online shop, you can even stock up on blinis and mother-of-pearl serveware to complete your spread.

Anastasia Gold Caviar is produced at Evans Farm, a multi-generational family farm in Pierson, FL. The farm, established by husband-wife duo Marilyn and Gene Evans in 1982, was originally a cattle farm, but Gene had big dreams of raising sturgeon for caviar.
Today, the Anastasia Gold brand consists of three varieties of sturgeon caviar — Osetra (or Ossetra), Imperial Siberian, and Royal Sevruga. Currently, only certain quantities of individual tins of Osetra and Siberian are available for order, but you can purchase a sampler pack or keep an eye out for the next full restock!

Louisiana Caviar Co. | Louisiana

Unlike the other producers on this list, Louisiana Caviar Co.’s line of “Cajun Caviar” does not include any sturgeon caviar. Rather, its specialty is caviar harvested from bowfin (known regionally as choupique), wild-caught in the Atchafalaya basin in Louisiana. Another product that sets this brand apart as distinctly Cajun is its spicy variety — bowfin roe infused with ghost peppers.
