For Christmas Eve, Christmas morning, or perhaps New Year’s Eve or New Year’s Day, a surefire recipe to delight kids and adults of all ages is the traditional Bisquick Sausage Ball.

You can also make these the night before and cook them in the morning to make your holiday morning go more smoothly. If it’s just your family, these sausage balls served with orange juice and coffee are enough to call breakfast on their own. You can also add fruit and eggs for a larger breakfast.

And, if you add these to a lunch or dinner buffet, there will not be any left – guaranteed!

When it comes to this simple recipe, there are hundreds or slight variations. But they all pretty much have the following ingredients:

  • Bisquick mix
  • Breakfast sausage
  • Grated cheddar cheese

Personally, I like a sausage ball that is only slightly bready. I want sausage and cheese to be the stars of the show.

I use mild breakfast sausage, adding 1/2 tablespoon of crushed red pepper to the recipe. I also like adding 1/4 cup of chopped green onion (green parts only).

Bisquick Sausage Balls with Cheddar Cheese

This traditional recipe is delicious and easy enough to make for your family on the weekends and beloved enough to serve a crowd and not have a single one left over.

Ingredients
  

  • 1 lb bulk breakfast sausage (not links). I used Kroger house brand use mild or hot sausage. I use mild, and then I add crushed red pepper. If you use hot sausage, you will not need to add crushed red pepper.
  • 1 lb shredded sharp cheddar cheese Grate the cheese from a block of cheese as shredded cheese has additives that make it drier. However, if you are in a pinch, use Tillamook Sharp Cheddar Farmstyle Thick Cut.
  • 2 cups Bisquick mix I make mine with gluten-free Bisquick
  • 1/4 to 1/2 cups whole milk Use enough milk to form balls that aren't dry but are just moist enough to stick together. For gluten-free Bisquick, this requires 1/2 cup milk. If you are using regular Bisquick, you likely only need 1/4 cup of milk.
  • 1/4 cup chopped green onion or chives (green parts only)
  • 1/2 tbs crushed red pepper
  • ketchup, pepper jelly, or dipping sauce of your choice

Instructions
 

  • Preheat oven to 350 degrees
  • Place *all ingredients (except dipping sauce) into a bowl and mix with your hands. If you have a stand mixer, you can mix with your paddle attachment.
  • *for milk addition: for gluten-free Bisquick, add 1/2 cup milk. For regular Bisquick add 1/4 cup to 1/2 cup milk. You want the consistency to be moist enough to shape a ball, but just enough to do so.
  • Line a cookie sheet with parchment paper.
  • Form one-inch balls using your hands or a cookie dough scoop. Place on the parchment paper.
  • Cook for 20 to 25 minutes.
  • Remove and serve with dipping sauce.
  • Should make 30-36 sausage balls.
