Sun-Dried Tomato Dressing
You can also use this dressing as a pesto replacement over pasta or on a flatbread!
Equipment
- 1 blender or food processor
Ingredients
- ¼ cup sun-dried tomato halves
- ½ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons chopped garlic
- 1 teaspoon dried oregano leaves
- ¼ teaspoon red pepper flakes optional
- Salt to taste
- Ground black pepper to taste
Instructions
- Roughly chop the sun-dried tomatoes and place in a blender or food processor with the rest of the ingredients. Blend until smooth, 2 to 3 minutes.
