Ingredients

Beet-Ginger Syrup

  • 8 oz golden beets diced
  • 1-inch piece fresh ginger sliced
  • 2 cups water
  • 2 cups white sugar

Lemon Thyme Foam

  • 250 ml lemon juice
  • 250 ml thyme simple syrup
  • 2 g methylcellulose
  • 1 g xanthan gum

Ginger Daisy

  • 1.5 oz Corazรณn Blanco
  • 0.75 oz beet-ginger syrup
  • 0.25 oz limoncello
  • Lemon thyme foam for topping

Instructions

Beet-Ginger Syrup

  • Put the golden beets and ginger in a pot over medium-high heat with a ยผ cup of water. Allow to cook until beets are fork-tender and ginger is fragrant. Add remaining 1ยพ cup of water and sugar to the pot and stir until sugar is dissolved. Run mixture through a blender on high, then strain.

Lemon Thyme Foam

  • Whisk everything together.
  • Add contents to an ISI canister and charge twice.

Ginger Daisy

  • Combine all ingredients into a shaker tin.
  • Add ice and stir.
  • Serve in a rocks glass and top with lemon thyme foam.

Notes

  1. Use store-bought thyme syrup, or simmer equal parts sugar and water with a few sprigs of fresh thyme until the sugar dissolves, then let it steep for 10 to 15 minutes before straining.
  2. For a store-bought alternative to the beet-ginger syrup, use Natalieโ€™s Carrot, Ginger, Turmeric, Apple Juice (Yes, all those ingredients in one juice!). It has a perfect balance of savory, sweet, and spice. If using this product, use it as a juice (changing the recipe to 0.5 oz. Natalie's and 0.25 oz. lime juice) and substitute agave for the syrup.
