This recipe is one that I must have come up with after seeing all those upside-down pastry turnovers on social media. While these aren’t in that “upside-down” vein, they are super quick and tasty! And, unlike most similar recipes, this one is savory, not sweet.
These pastry tarts with apples, plums, and brie make a beautiful spread for guests, and they are easy enough for your kids to conquer with some guidance.
These are not stylized photos, as I captured them in the moment and didn’t expect this recipe to be such a hit on my first try. But no adjustments were needed — it really is so simple, fun, and delicious.
Plum Apple Puff Pastry Recipe
Ingredients
- 1 sheet of puff pastry, thawed
- 8 oz brie cheese, sliced thinly (rind removed if preferred)
- 2 medium apples, thinly sliced
- 2 medium plums, thinly sliced
- 2 tsbp olive oil
- 1 tsbp fresh thyme leaves
- 1/4 cup toasted pecans, roughly chopped
- 1/4 tsp flaky sea salt
- Drizzle of hot honey Optional
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to smooth out any creases. From here you have TWO options: Option #1: Transfer it to a parchment-lined baking sheet. Gently score a 1-inch border around the edges of the pastry with a knife, being careful not to cut all the way through. Use a fork to lightly prick the inside of the scored area to prevent it from puffing up too much. Option #2: cut the pastry into rectangles, approximately 2.5 by 3 inches. Similarly, score them and then prep them with the same instructions below, just changing as needed to make it work on a smaller pastry. With the smaller squares, instead of using both fruits on a square, I used either plums OR apples on each square, alternating my fruit choice as I prepped each one.
- Pre-Bake the Pastry: Bake the puff pastry for about 5 minutes, or until it starts to turn lightly golden and crisp, but not fully baked.
- Add the Brie Layer: Remove the partially baked puff pastry from the oven and immediately layer the brie slices evenly over the pricked area of the pastry.
- Arrange the Fruit: Toss the sliced apples and plums with olive oil in a mixing bowl. Arrange the fruit slices in an overlapping pattern on top of the brie.
- Add Thyme: Sprinkle the thyme leaves over the arranged fruit.
- Final Baking: Return the tart to the oven and bake for another 15-20 minutes, or until the puff pastry is golden brown and crisp, and the fruit is tender.
- Finishing Touches: Once out of the oven, scatter the chopped toasted pecans on top for added crunch, sprinkle the tart with flaky sea salt for a savory finish. Optionally, drizzle with a small amount of hot honey.
- Serve: Let the tart cool slightly before slicing and serving. This tart is delicious served warm or at room temperature, making it perfect for gatherings.
