This appetizer was borne out of necessity. You know the scene: Everyone is gathered in your kitchen munching on all your prepped food that you need for the main dishes because the cheese plate is gone and they are still hungry. Yes, we’ve all been there. The ingredients for this quick appetizer happened to be in my fridge and, on the spot, I was able to lure everyone away from the kitchen, and a new recipe was born!
This is a simple, easy hors d’oeuvre that is the perfect accompaniment to a glass of wine.
Prosciutto, Gorgonzola and Spinach — Thanksgiving Style!
My creative title just gave away three of the ingredients. But, there are two more. Add some dried cranberries and pinenuts to the assembly and you’ll have this ready to go in no time.
- Lay out the prosciutto and top with a couple of leaves of spinach.
- Sprinkle with Gorgonzola, 3-4 dried cranberries and 6-8 pine nuts.
- Roll up and place on platter.
You are done!
I like to serve this with olives, as I happen to think olives go with just about everything in the whole wide world.
