This summer Cobb Salad is a fresh twist on a classic, featuring seasonal produce like corn and peaches for a satisfying meal. While the traditional Cobb is known for its hearty combination of chicken, bacon, avocado, and blue cheese, this version keeps those staples but adds sweet, juicy peaches and grilled corn for a summer upgrade.
Itโs the kind of dish that works for just about any occasion โ an easy lunch at home, a casual dinner on the patio, or a dish to share at a weekend cookout. The mix of warm and cool ingredients gives it great texture and flavor, and it holds up well if made ahead (just keep the dressing on the side until serving).
If youโre looking for a way to use up summer produce or just want a salad that feels a little more special, this one hits the mark. Itโs simple, colorful, and easy to make โ and it might even convert someone who says they โdonโt really like salad.โ
And, the salad dressing? Youโll make this one time after time. I found it in the New York Times โ itโs their Cobb Salad โย and Iโve been hooked ever since.
SB Note: While I have tried to keep all my โLazy Girl Recipesโ to a 15-minute meal prep, this one takes a bit longer, but itโs not complicated. And, if you have any leftover bacon from breakfast, you could actually scramble and make this in 15 minutes!


Summer Cobb Salad with Peaches and Corn
Ingredientsย ย
Salad
- 12 oz rotisserie chicken
- 1 head romaine lettuce chopped
- 3 strips of cooked bacon
- 2 oz blue cheese
- 2 ears of corn
- 2 fresh peaches chopped (you may need three peaches; it depends on their size)
- 2 cups cherry tomatoes
- 1 avocado
- 2 hard-boiled eggs
Salad Dressing
- 1 shallot medium size
- 3 tbs red wine vinegar
- 1 tbs dijon mustard
- 3 tbs olive oil
- Salt and pepper to taste
- Fresh thyme to taste
Instructionsย
- Clean and chop lettuce; set aside.
- Cook bacon; set aside.
- Save one tablespoon of bacon grease and cook corn. Set aside.
- Chop your egg, crumble the blue cheese, chop the bacon, chop your chicken, quarter the cherry tomatoes, and open your avocado.
- Then, mix all ingredients together for the salad dressing and set aside.
- Place lettuce on a large round plate and then layer with lines of each ingredient to make a classic Cobb Salad look. See photo for inspiration.
- Drizzle dressing all over the salad โ it's delicious!
- Salt and pepper to taste and serve!
