This summer Cobb Salad is a fresh twist on a classic, featuring seasonal produce like corn and peaches for a satisfying meal. While the traditional Cobb is known for its hearty combination of chicken, bacon, avocado, and blue cheese, this version keeps those staples but adds sweet, juicy peaches and grilled corn for a summer upgrade.

Itโ€™s the kind of dish that works for just about any occasion โ€” an easy lunch at home, a casual dinner on the patio, or a dish to share at a weekend cookout. The mix of warm and cool ingredients gives it great texture and flavor, and it holds up well if made ahead (just keep the dressing on the side until serving).

And, the salad dressing? Youโ€™ll make this one time after time. I found it in the New York Times โ€“ itโ€™s their Cobb Salad โ€“ย and Iโ€™ve been hooked ever since.

SB Note: While I have tried to keep all my โ€œLazy Girl Recipesโ€ to a 15-minute meal prep, this one takes a bit longer, but itโ€™s not complicated. And, if you have any leftover bacon from breakfast, you could actually scramble and make this in 15 minutes!

For this Lazy Girl High Protein Recipe series, Iโ€™ve been including a list of items I always have on hand. For this salad, I almost always have a rotisserie chicken, meat pulled from the bone, in my refrigerator. It makes putting dinner together super easy. And, in the summer, peaches, tomatoes, and corn are omnipresent. Eggs? Always. Blue cheese? If I donโ€™t have any, I will have goat cheese. While not a traditional Cobb, I would substitute that in a heartbeat.

Summer Cobb Salad with Peaches and Corn

Ingredients

Salad

  • 12 oz rotisserie chicken
  • 1 head romaine lettuce chopped
  • 3 strips of cooked bacon
  • 2 oz blue cheese
  • 2 ears of corn
  • 2 fresh peaches chopped (you may need three peaches; it depends on their size)
  • 2 cups cherry tomatoes
  • 1 avocado
  • 2 hard-boiled eggs

Salad Dressing

  • 1 shallot medium size
  • 3 tbs red wine vinegar
  • 1 tbs dijon mustard
  • 3 tbs olive oil
  • Salt and pepper to taste
  • Fresh thyme to taste

Instructions

  • Clean and chop lettuce; set aside.
  • Cook bacon; set aside.
  • Save one tablespoon of bacon grease and cook corn. Set aside.
  • Chop your egg, crumble the blue cheese, chop the bacon, chop your chicken, quarter the cherry tomatoes, and open your avocado.
  • Then, mix all ingredients together for the salad dressing and set aside.
  • Place lettuce on a large round plate and then layer with lines of each ingredient to make a classic Cobb Salad look. See photo for inspiration.
  • Drizzle dressing all over the salad โ€“ it's delicious!
  • Salt and pepper to taste and serve!
