RECIPE: Hot Cheesy Bacon Peach Dip

This hot, cheesy bacon-peach dip is delicious and one more way to enjoy the bounty of peaches this time of year!

When peach season is in full swing, we want to add them to EVERYTHING! But you can always use canned peaches when the weather cools and peaches aren’t so plentiful at the market. One thing is for sure — this is a crowd-pleaser and sure to be a hit.

Our recipe partner for this delicious dip is Kroger, where you can pick everything up or have it delivered via their Boost program, which includes fuel point savings and digital coupons as well!

Hot Cheesy Bacon Peach Dip

Servings 8

Ingredients
  

  • 1 cup vidalia onion - chopped about 1/2 an onion
  • 3 peaches - chopped
  • 1 ear of corn, cut off the cob
  • 4 strips bacon
  • 1/2 tsp salt
  • 1 tsp crushed red pepper
  • 8 oz cream cheese room temperature, I used Kroger brand
  • 1/2 cup mayonnaise
  • 8 oz shredded cheddar I use Tillamook
  • 10 ritz crackers, crumbled

Instructions
 

  • Preheat oven to 375 degrees.
  • Cook the bacon in a skillet and reserve 2 tbs of bacon grease to cook your vegetables and fruit in.
  • Remove the bacon to cool on a paper towel and cook onions, corn, peaches, salt, and crushed red pepper for 5 minutes.
  • Crumble the bacon and add back to the mixture. Turn off heat.
  • In a large bowl, combine cream cheese, mayonnaise, and shredded cheddar.
  • Then, add peach/corn/onion mixture.
  • Crumble the ritz crackers (just place them in a small ziplock back and crumble them).
  • Add cream cheese mixture to a 8-inch cast iron skillet and top with the Ritz cracker crumbles.
  • Bake at 375 degrees for 25 minutes.
  • Add fresh peaches and green onions as garnish to the top.
  • Serve with Ritz crackers and enjoy!
