Dragon Fruit Mojito

This dragon fruit mojito is the perfect summertime cocktail!

Ingredients
  

  • 8 mint leaves
  • 1 tsp sugar or 1½ for sweeter
  • 2 tbsp dragon fruit
  • ½ oz. lime juice freshly squeezed
  • 2 oz. white rum
  • 1-2 oz. club soda
  • Mint leaves for garnish
  • Sliced dragon fruit for garnish

Instructions
 

  • Place dragon fruit, mint leaves, sugar, and lime juice in bottom of highball glass.
  • Muddle to bruise mint leaves and break apart fruit.
  • This will leave textured fruit seeds in the cocktail. If you prefer it without, puree dragon fruit and strain to use in place of whole fruit pieces.
  • Add rum. Fill with crushed ice.
  • Finish with club soda and a swizzle of a bar spoon to mix.
  • Enjoy with mint and fruit garnish.
