Snack cakes (or snacking cakes) are simple, single-layer confections that come together easily and keep for a while, so you can set them out and casually grab a slice when the mood strikes, perfect for all-day grazing. Today, we have two favorite variations from Table & Thyme Catering in Birmingham, Alabama β€” one blueberry and one strawberry!

Blueberry Buckle

A loaf pan, five staple ingredients, your berry of choice … and you’re in business. A β€œbuckle” is an old-fashioned snack cake similar to a coffee cake, but studded with seasonal fruit. This blueberry variation is ideal for leaving out over long holiday weekends β€”Β a guaranteed crowd-pleaser with morning coffee or topped with a scoop of ice cream for dessert. Learn to make it HERE.

Strawberry Snacking Cake

This picture-perfect strawberry cake is infused with cornmeal, olive oil, lemon, and vanilla. Finished with swirls of strawberry jam and slices of fresh berries, it’s almost too pretty to eat. While it’s great for any warm-weather gathering, it’s an obvious fit for patriotic occasions β€” you could even incorporate blueberries into the topping for an understated spin on a flag cake!
