Tomato Cucumber Salad

Bright, crisp, and full of flavor — this tomato and cucumber salad is the ultimate summer side.

Ingredients
  

  • 2 large cucumbers
  • 5 Roma tomatoes
  • 1/2 red onion
  • 1/2 ounce sliced basil
  • 1/2 tbsp salt
  • 1 tbsp sugar
  • 2 tsp Greek seasoning blend We recommend Cavender All Purpose Greek Seasoning
  • 1/2 cup white wine vinegar
  • 1/4 cup water
  • 1/8 cup olive oil

Optional toppings:

  • Crumbled feta cheese
  • Zest of 1/4 lemon

Instructions
 

Dressing:

  • Slice red onion and set aside.
  • Combine salt, sugar, Greek seasoning blend, white wine vinegar, water, and olive oil in a bowl.
  • Whisk until dissolved.
  • Add red onion to bowl and combine.
  • Cover and let marinate for 4-12 hours.

Salad:

  • Cut 1/2 inch from each end of the cucumber and peel completely. Slice in half lengthwise and deseed with a small spoon.
  • Slice cucumber into 1/4 inch half moon pieces and add to a mixing bowl.
  • Dice Roma tomatoes and add to the mixing bowl.
  • Add sliced basil to the mixing bowl.
  • Pour the marinated dressing into the mixing bowl and combine gently.
