Tomato Cucumber Salad
Ingredients
- 2 large cucumbers
- 5 Roma tomatoes
- 1/2 red onion
- 1/2 ounce sliced basil
- 1/2 tbsp salt
- 1 tbsp sugar
- 2 tsp Greek seasoning blend We recommend Cavender All Purpose Greek Seasoning
- 1/2 cup white wine vinegar
- 1/4 cup water
- 1/8 cup olive oil
Optional toppings:
- Crumbled feta cheese
- Zest of 1/4 lemon
Instructions
Dressing:
- Slice red onion and set aside.
- Combine salt, sugar, Greek seasoning blend, white wine vinegar, water, and olive oil in a bowl.
- Whisk until dissolved.
- Add red onion to bowl and combine.
- Cover and let marinate for 4-12 hours.
Salad:
- Cut 1/2 inch from each end of the cucumber and peel completely. Slice in half lengthwise and deseed with a small spoon.
- Slice cucumber into 1/4 inch half moon pieces and add to a mixing bowl.
- Dice Roma tomatoes and add to the mixing bowl.
- Add sliced basil to the mixing bowl.
- Pour the marinated dressing into the mixing bowl and combine gently.
