Watermelon Pepperoncini Salad
IngredientsΒ Β
- 4 cups cubed seedless watermelon chilled
- Β½ cup sliced pepperoncini
- 2 tablespoons pepperoncini brine
- Β½ cup crumbled feta cheese
- ΒΌ cup fresh basil leaves torn
- 1-2 tablespoons extra virgin olive oil
- Freshly cracked black pepper to taste
InstructionsΒ
- In a large chilled bowl, combine cubed watermelon and sliced pepperoncini. Drizzle with pepperoncini brine and olive oil. Toss gently.
- Add feta and basil, folding everything together lightly. Finish with cracked black pepper. Serve immediately, while the watermelon is crisp.
