Mini Tomato & Bacon Pie
Ingredients
- 8 mini pie shells buy frozen and thaw prior to preparation
- 1 rounded cup chopped tomatoes
- 1/3 cup mayonnaise Use light mayo to save a few calories!
- 1 cup shredded cheddar cheese plus extra to sprinkle over top
- 1/4 cup crumbled bacon Make sure you get the real stuff — bacon bits aren’t going to cut it!
- 1/2 tsp chopped fresh basil or dried
- Salt and pepper to taste
Instructions
- Preheat oven to 350 °F
- Bake the mini pie crusts until brown (approximately 15 minutes).
- While the crusts are baking, combine the other ingredients in a mixing bowl.
- Pour or spoon the tomato mixture evenly between the 8 mini pies.
- Top each pie with the extra shredded cheddar you set aside earlier.
- Bake in the oven for about 25 minutes.
- Remove and allow pies to cool before serving.
