Fresh Tomato Basil Pasta Sauce
Ingredients
- 6 pints ripe cherry tomatoes
- 6 garlic cloves
- 4 sprigs fresh thyme
- 1 dried whole arbol chili
- 1 bay leaf
- 1/2 cup extra virgin olive oil
- Sea salt to taste
- Freshly ground black pepper to taste
- 8-10 large fresh basil leaves torn
- 1 box angel hair pasta
Instructions
- Preheat the oven to 500°F (260°C).
- Assemble the ingredients in an ovenproof baking dish.
- Cover the bottom of the dish with cherry tomatoes.
- Add whole garlic cloves, fresh thyme, bay leaf, and the dried arbol chili.
- Generously drizzle with olive oil, ensuring the tomatoes are well coated.
- Season with sea salt and pepper.
- Roast in the oven for 20–30 minutes, or until the tomatoes begin to burst and release their juices.
- For a smoky, fire-charred effect, finish under the broiler for a few minutes until the tops of the tomatoes are blistered.
- Cool slightly, then crush the tomatoes gently by hand or with a fork.
- Stir in torn fresh basil, taste, and adjust seasoning if needed, and toss with the angel hair pasta.
