Ricotta Fritters

Ingredients

  • 3/4 cup all purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp lemon zest
  • 1 cup whole fat ricotta
  • 2 eggs beaten
  • 2 tbsp white sugar
  • 1 1/2 tsp vanilla

Instructions

  • In a large steel bowl, whisk together flour, baking powder, salt, and lemon zest.
  • In another bowl, whisk together ricotta, eggs, sugar, and vanilla extract.
  • Gently fold flour mixture into ricotta mixture.
  • Drop fritters into oil at 375 degree F using a ΒΎ ounce scoop and fry for 3 minutes until deeply golden brown.
  • Immediately toss warm fritters in granulated or powdered sugar.
