Ingredients

  • 6 strips thick-sliced applewood bacon cut into Β½-inch pieces
  • 1 small yellow onion chopped
  • 2 garlic cloves minced
  • ΒΌ cup apple cider vinegar
  • 2 lbs fresh collard greens stems removed and sliced into 3-inch-wide strips
  • 1 cup chicken broth
  • 1 tsp kosher salt
  • Β½ tsp freshly ground black pepper

Instructions

  • In a large skillet over medium-low heat, cook the bacon for 8 to 12 minutes, turning over once, until desired crispness. Remove bacon and roughly chop; set aside.
  • SautΓ© the onion and garlic in bacon grease for several minutes over low heat until the onion begins to soften. Add the vinegar and allow the mixture to cook until the liquid has reduced by about half.
  • Add the collard greens, chicken broth, salt, and pepper and bring to a simmer at medium-low heat. Stir the mixture occasionally, until the collard greens have wilted and lost their brightness.
  • Serve with warm juices from the pan.
