This recipe is perfect for peach season. Start with amazing peaches and WOW! Start with not-as-good peaches and PRETTY DARN GOOD! There is something magical that happens when you bake or grill even not-so-great peaches. They become really good. But, like all things in life, start with the best peaches and get the best results.

This recipe started from reading a 10-year-old magazine I was flipping through during a recent organization/purging session. (Haven’t we all had those lately?) I came across a recipe for stuffed peaches with a cheesecake filling. I tried making them and was not really happy with the results. But, I realized I could take the basic idea and reduce the sugar, add some granola and almonds, and chop up the peaches to have the perfect fruit start to the day. Eat it on its own OR, as I like to, over a large serving of plain Greek yogurt.

This proves that not all recipes that fail are true failures as they lead to the next inspiration, which is what this new recipe is. There are lots of life lessons in that previous statement and with the state of the world right now, it’s a good reminder.

Breakfast Baked Peach Cheesecake Crumble

While I used this for breakfast with yogurt, it would be really good served for dessert with vanilla ice cream!

Ingredients

  • 1/8 cup butter melted
  • 4 ounces cream cheese beaten (that's 1/2 a typical cream cheese box)
  • 1 egg yolk
  • 1 1/4 tsp vanilla
  • 1 tablespoon honey or substitute with 1.5 tablespoons sugar
  • 3-4 large peaches chopped into approx. 1/2 inch pieces (about 3 1/2 to 4 cups of peaches)
  • 1/2 cup your favorite granola
  • 1/4 cup slivered almonds

Instructions

  • Preheat oven to 350 degrees.
  • In a 9-inch (larger is fine) pie dish (or casserole dish), place the chopped peaches.
  • Pour melted butter on top and mix.
  • In a medium-size bowl, with a hand mixer, beat the cream cheese until soft. Add the egg yolk, vanilla, and honey. Mix until creamy.
  • Place the cream cheese mixture in dollops across the peaches, every few inches.
  • Place dish in oven for 30-35 minutes, uncovered.
  • After 10 minutes, take dish out and sprinkle granola and almonds across the top.
  • Bake for the remaining 20-25 minutes.
  • Take out and enjoy on its own, with yogurt, or spread on a slice of buttered bread.
