Cooking Unscripted: Easy Mushroom + Parmesan Puff Pastry Bites

Cooking Unscripted is about freedom in the kitchen: no rules, no rigid measurements, no guilt when things get a little messy. Iβm not classically trained, unless you count learning the hard way that baking soda and baking powder are not interchangeable. But thatβs the point. Cooking, for me, is less about perfection and more about joy.
Light a candle, pour a drink, and toss aside the measuring spoons. Today, weβre tackling cute little mushroom, parmesan, and green onion puff pastry bites.

A Shroom With a View
This puff pastry is a cozy little gem with mushrooms, green onions, garlic, thyme, and parmesan. Itβs kind of like your favorite sweater: warm, earthy, and quietly luxurious.
I went the shortcut route with Pepperidge Farm pastry shells from the grocery store freezer aisle, because with two kids and five dogs β¦ time is always the first thing on the chopping block. But you can always make your own pastry dough from scratch if you like that sort of thing. Be sure to brush on some melted butter for flavor and golden goodness.
While those bad boys puff up in the oven, sautΓ© a heap of mushrooms in olive oil or butter or both (your choice, Iβm not here to micromanage) until theyβre browned and a little crisp around the edges. Iβm also a huge garlic fan. Huge. So, I added a few cloves (minced) along with some fresh thyme (de-stemmed), and a pinch of Maldon salt to bring out the flavors.
In a separate pan, sear the green onions in a bit of olive oil just long enough to get that smoky, charred flavor while still keeping their freshness.


Layer some fresh parmesan over the pastry base, then heap the mushrooms and seared green onions on top. Sprinkle some thyme for good measure, and β¦ thatβs it. Youβre done. Yes, really!
This tart begs for a glass of red wine and maybe a candle or two. Eat it for dinner, snack on it for lunch, or serve it at a party and watch your friends wonder when you became such a culinary genius.


The "A Shroom with a View" Mushroom + Parmesan Puff Pastry Bites
IngredientsΒ Β
- Mushrooms I used a combo of baby portobellos and white mushrooms.
- Parmesan cheese I used shaved parmesan for better melting.
- Green onions Roughly chopped
- Garlic
- Thyme Fresh and de-stemmed
- Butter For melting
- Olive oil
- Maldon salt
- Puff pastry shells
InstructionsΒ
- Follow the puff pastry instructions to create your base.
- SautΓ©e mushrooms in olive oil, butter, or both. I used both! I also added fresh garlic, thyme, and a bit of Maldon salt for flavor. Sear until mushrooms are brown. And don't crowd the pan! Mushrooms need room to breathe.
- Sear green onions in olive oil over medium-high heat until slightly charred.
- Arrange Parmesan on baked/puffed-up pastry shells and layer Parmesan, mushrooms mixture, green onions, and a sprinkle of fresh thyme (if you're a big thyme fan).
- Bake for another 5-8 minutes until the cheese has melted a bit. Be careful not to burn those pretty puffs!
