RECIPE: Green Chile Turkey Soup

Green Chile Turkey Soup
Ingredients
- 2 tbsp avocado oil
- ¼ cup finely chopped onions
- 1 jalapeño pepper seeded and chopped
- 2 cloves garlic minced
- 1 lb shredded leftover turkey
- 4 cups chicken broth or leftover turkey broth
- 1 4-ounce can diced green chilies
- 2 tsp ground cumin
- Salt
- Ground black pepper
- 1 cup sour cream
- Shredded Mexican cheese blend optional topping
- Sliced jalapeño peppers optional topping
- Fresh cilantro leaves optional topping
Instructions
- Heat the oil in a stockpot over medium heat. Add the chopped onions and jalapeño and cook, stirring often, until tender, about 10 minutes. Stir in the garlic and cook for 1 more minute.
- Stir in the turkey, broth, chilies, and cumin. Bring the soup to a low boil and continue to cook for 20 minutes. Remove the pot from the heat and season the soup with salt and pepper to taste. Stir in the sour cream.
- Serve topped with cheese, sliced jalapeños, and/or cilantro leaves, if desired.
