Greek Yogurt Pumpkin Bark

A sweetly-spiced fall treat, this pumpkin and yogurt bark highlights the best flavors of the season.

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 cup pumpkin purée
  • 1-2 tbsp maple syrup depending how sweet you like it!
  • 1/4 tsp cinnamon
  • 2 tbsp peanut butter
  • 1/4 cup granola
  • Additional toppings as desired like chocolate chips, peanut butter chips, or additional dried fruits

Instructions
 

  • In a bowl, mix pumpkin purée, Greek yogurt, maple syrup, and cinnamon.
  • Spread the mixture over a baking sheet lined with wax paper.
  • Dot the peanut butter over the mixture and, using a butter knife or other utensil, create swirls of peanut butter. Top with granola.
  • Freeze for one hour. Break into pieces and enjoy!
