Easy Summer Coconut Poke Cake

Coconut cake is heavenly anytime, but this version is especially great for summer celebrations because you have to prepare it advance (allow two days) to let the flavor be at its best. Make this sweet treat by Wednesday this week, and you’ll be all set for the 4th.
