To celebrate another year in business, the beloved bakery brought back one of its cult favorites, by popular demand: their famous lemon bars! While the treat was only available for a limited time in July, the team has shared its tried-and-true recipe so you can enjoy it year-round. These classic lemon bars are perfect for for tailgates, bake sales, potlucks … you can’t go wrong.

Lemon bars are known for their brightness and zippy, tart-sweet flavor profile — and this recipe is true to the formula. Combining delicious lemon curd filling with a buttery shortbread crust, these will disappear quickly, so you may want to consider multiple batches.

The bakers at SusieCakes have a few pro tips for the best results:

  • First, keep a close eye on your bars when they’re in the oven, as you don’t want to over-bake them.
  • Second, make sure you have some extra powdered sugar on hand to sprinkle over your bars before serving. This adds a light-as-air final touch of sweetness and makes for a pretty presentation.
  • And, of course, it’s best to use freshly squeezed lemon juice if possible.

Classic Lemon Bars

Ingredients
  

For the crust:

  • 2 cups flour
  • 1 cup powdered sugar sifted
  • Pinch of salt
  • 1 cup European-style butter unsalted, cut in chunks

For the filling:

  • 4 whole eggs at room temp
  • 6 tbsp flour
  • 2 cups sugar granulated
  • 6 tbsp lemon juice freshly squeezed if possible
  • Additional powdered sugar for dusting

Instructions
 

  • Preheat oven to 350℉.
  • Whisk dry ingredients together for crust.
  • Cut butter in with fork until dough is crumbly.
  • Press into 9-by-13 baking dish lined with parchment paper.
  • Bake 20 minutes and cool.
  • Whisk eggs, flour, and sugar together.
  • Add lemon juice.
  • Pour over crust and bake 20-25 minutes. (Be careful not to overbake!)
  • Cool on wire rack.
  • Remove from pan by lifting parchment paper.
  • Cut and dust with powdered sugar.
