βMy grandmother was the inspiration for our black-eyed pea salad,β shares Chef John. βSheΒ would always serve this atΒ family dinners and itβs one of my favorites. The vinegar in the salad cools the palate, making it the ideal side for hot chicken. We use more herbs than my grandmother did and dress the peas in a vinaigrette.
