Mini Tomato & Bacon Pie

These mini tomato and bacon pies are super easy to make — with store-bought pie shells and just a few simple ingredients, they deliver a big punch of flavor without the fuss.

Ingredients
  

  • 8 mini pie shells buy frozen and thaw prior to preparation 
  • 1 rounded cup chopped tomatoes
  • 1/3 cup mayonnaise  Use light mayo to save a few calories!
  • 1 cup shredded cheddar cheese plus extra to sprinkle over top
  • 1/4 cup crumbled bacon  Make sure you get the real stuff — bacon bits aren’t going to cut it!
  • 1/2 tsp chopped fresh basil or dried
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350 °F
  • Bake the mini pie crusts until brown (approximately 15 minutes). 
  • While the crusts are baking, combine the other ingredients in a mixing bowl. 
  • Pour or spoon the tomato mixture evenly between the 8 mini pies. 
  • Top each pie with the extra shredded cheddar you set aside earlier. 
  • Bake in the oven for about 25 minutes. 
  • Remove and allow pies to cool before serving.
