Ingredients

  • 4 cups cubed seedless watermelon chilled
  • Β½ cup sliced pepperoncini
  • 2 tablespoons pepperoncini brine
  • Β½ cup crumbled feta cheese
  • ΒΌ cup fresh basil leaves torn
  • 1-2 tablespoons extra virgin olive oil
  • Freshly cracked black pepper to taste

Instructions

  • In a large chilled bowl, combine cubed watermelon and sliced pepperoncini. Drizzle with pepperoncini brine and olive oil. Toss gently.
  • Add feta and basil, folding everything together lightly. Finish with cracked black pepper. Serve immediately, while the watermelon is crisp.

Notes

Choose your watermelon wisely: Look for one with a creamy yellow field spot and a hollow, heavy feel. That’s your sign that the fruit’s ripe.
 – Use block feta instead of pre-crumbled: The texture and saltiness are fresher and more luxurious.
Keep it cold: Chill your serving bowl in the fridge so the salad stays refreshing.
