Greek Yogurt Pumpkin Bark
Ingredients
- 1 cup plain Greek yogurt
- 1 cup pumpkin purée
- 1-2 tbsp maple syrup depending how sweet you like it!
- 1/4 tsp cinnamon
- 2 tbsp peanut butter
- 1/4 cup granola
- Additional toppings as desired like chocolate chips, peanut butter chips, or additional dried fruits
Instructions
- In a bowl, mix pumpkin purée, Greek yogurt, maple syrup, and cinnamon.
- Spread the mixture over a baking sheet lined with wax paper.
- Dot the peanut butter over the mixture and, using a butter knife or other utensil, create swirls of peanut butter. Top with granola.
- Freeze for one hour. Break into pieces and enjoy!
