Summer Vegetable Salad in Avocado Cups

- 12 oz shoe-peg corn
- 16 oz fresh green peas
- 1 cup grape tomatoes sliced
- 1 cup cucumber sliced
- 1 small red onion sliced
- 1 cup white vinegar
- Β½ cup mayo
- Β½ tsp kosher salt
- Β½ tsp black pepper
- Β½ cup bacon crumbles
- Fresh basil for garnish
- 3 avocado halves
InstructionsΒ
- Combine all ingredients together, place inside of each avocado half, and garnish with fresh basil leaves.Β
