RECIPE: Grinder Sub Sliders

Grinder Sub Sliders
Ingredients
- 1/2 head iceberg lettuce shredded
- 1 small red onion halved and thinly sliced
- 1/2 cup drained and sliced pickled banana peppers (50 g)
- 1/2 cup pitted and sliced green olives (70 g)
- 1/2 cup drained and sliced pimiento peppers (150 g)
- 1 cup mayonnaise (240 g)
- 2 Tbsp red wine vinegar
- 2 tsp dried Italian seasoning
- Kosher salt
- Freshly ground black pepper
- 8 oz sliced provolone cheese preferably square slices (230 g)
- 1 baguette halved lengthwise and toasted
- 4 oz thinly sliced ham (115 g)
- 4 oz thinly sliced salami (115 g)
- 4 oz thinly sliced mortadella (115 g)
- 2 tomatoes cut into 3/4 in (6 mm) thick slices
Instructions
- In a medium bowl, toss together the lettuce, red onion, banana peppers, olives, and pimiento peppers. Add the mayonnaise, vinegar, and Italian seasoning. Season with salt and pepper and toss to coat the salad mixture.
- Cut each square slice of provolone diagonally in half to create two triangles (or two half-moons if the slices are round). Layer the bottom of the baguette with the provolone, ham, salami, mortadella, and tomatoes, then top with the salad mixture.
- Place the top of the baguette on the sandwich and use a bread knife to cut it crosswise into 2- to 3-in. [5 to 7.5 cm] slices. Use short skewers or toothpicks to secure the slices for serving. Enjoy immediately.
