Easy Oven-Baked Barbecue Chicken

Good and easy for family dinners or casual entertaining, this continues to be one of our favorites because you can make the sauce the night before.

Ingredients
  

  • 1 medium onion chopped
  • 2 T. oil
  • 2 T. vinegar
  • 2 T. brown sugar
  • 1/4 c. lemon juice
  • 1 c. ketchup
  • 3 T. Worcestershire sauce
  • 1/2 T. prepared mustard
  • 1 c. water
  • 1/2 t. salt
  • 1/8 t. cayenne pepper
  • 1/2 c. flour
  • 1 fryer cut up in pieces
  • 1/4 c. oil

Instructions
 

  • Make sauce by browning onions in tablespoons of oil. Add next 7 ingredients and simmer 30 minutes.
  • Combine salt, cayenne pepper and flour in a paper bag. Shake chicken in bag until coated. Brown in 1/4 cup hot oil. Pour off excess oil. Pour sauce over chicken and bake uncovered in 325 degrees for one hour.
  • Serve immediately.
