Preheat oven to 350 degrees.
In a 9-inch (larger is fine) pie dish (or casserole dish), place the chopped peaches.
Pour melted butter on top and mix.
In a medium-size bowl, with a hand mixer, beat the cream cheese until soft. Add the egg yolk, vanilla, and honey. Mix until creamy.
Place the cream cheese mixture in dollops across the peaches, every few inches.
Place dish in oven for 30-35 minutes, uncovered.
After 10 minutes, take dish out and sprinkle granola and almonds across the top.
Bake for the remaining 20-25 minutes.
Take out and enjoy on its own, with yogurt, or spread on a slice of buttered bread.
