The dog days of summer are nipping at our heels and as the temps go up, our appetites for heavy meals go down. Here are a few ideas for enjoying lighter fare during this sultry season.
Chopped Salmon Salad at Holiday Deli & Ham Co.
Holiday Deli & Ham Co. is known for their salads and the Chopped Salmon Salad is new to the menu this summer. We love that every bite of this salad has a different mix of flavors with all the ingredients that are piled high on the plate — grilled salmon, baby arugula, Craisins, sweet corn, red bell peppers, feta cheese, sunflower seeds, Israeli couscous and topped with herb Dijon vinaigrette. Available at all Holiday Deli & Ham Co. locations through the summer. holidaydeli.com
Smoothies and Salads at The Cosmic Coconut
The Cosmic Coconut is a smoothie and juice bar that also serves a full menu of salads and sandwiches. In their smoothies, bananas are responsible for the lovely texture and thickness usually created by ice in other less nutritious smoothies. Another primary ingredient in most of their smoothies is fresh coconut and/or coconut milk, used primarily as a healthy sweetener. The nutritional ingredients in their smoothies make them a good option for a lighter, on-the-go meal.
Their Kale Salad is a classic. Do not be embarrassed if you order two … one for dining-in and one for taking out. This is a Memphis favorite.
Since we are thirsty more often than hungry in the heat, it is a great time of year to try a juice cleanse and this is the place to go. dlogic.net/coconut
Andalusian Gazpacho at Ecco
This new Memphis restaurant has an abundance of choices for dining on the light side. Ecco on Overton Park opened in April 2014. Ecco serves bistro-style cuisine with a Mediterranean influence and is located in the Evergreen Historic District. This bowl of chilled Andalusian Gazpacho is calling your name! eccoonovertonpark.com
By Sea at The Grove Grill
Gotta love The Grove Grill! Always a winner. Among many traditional favorites, they are known for wonderful Gulf Oysters on the half shell. thegrovegrill.com
The Tartine at River Oaks
This Tartine, served open-faced with shrimp, edamame mayonnaise, beets, olives and Peppadew peppers, is a favorite on the lunch menu at River Oaks. riveroaksrestaurant.com
The Downtown Roll at Bangkok Alley
Another superb stop for sultry days: Bangkok Alley. One of many flavorful rolls is a Downtown Roll, made with smoked salmon, crab, eel and crawfish rolled inside, then flash fried to perfection and garnished with scallions, masago, spicy mayo, and eel sauce. bangkokalley.com
Picnic at Greencork
A bulls-eye for summertime, the Picnic Basket at Greencork self-serve wine bar is a signature item on the menu, and it can also be ordered to go. The basket is typically created for two, but one basket can be prepared for up to four people. If you would like to order a picnic basket to go, they recommend that you call ahead. greencorkwine.com
Enjoy your next light, local meal!
