Kathy has owned and operated several cafés about town prior to opening her grab-and-go catering company in Cooper-Young. Among her former restaurants: the 20/20 Diner at the Southern College of Optometry, the first Café Palladio (inside Palladio Antiques) and the Unknown Café inside the Cotton Exchange building downtown. She has been a vendor at area farmers’ markets for over five years, and, she adds, “I have catered every weekend of my life!”

Ingredients
  

  • 1 14- ounce can chickpeas rinsed and drained
  • 2 cloves garlic
  • 6 sprigs parsley
  • ¼ cup tahini sesame paste
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Add everything to the food processor but olive oil. Pulse four to five times; then add olive oil and process until smooth. Serve with toasted pitas or cut vegetables.

Ingredients
  

  • 16 ounces Kalamata olives drained and pitted
  • 2 sprigs fresh rosemary
  • 1 clove garlic
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Combine all ingredients in a food processor until you achieve a coarse paste. Tapenade is easy and tastes great with grilled pita or sliced veggies.
