For two years, I’ve wanted to sign up for a produce delivery service. I was always a little reticent, fearing I would get a crate of eggplants and nothing else. Turns out I had nothing to fear. I recently connected with the folks at Green Bean Delivery and liked the fact that they offered year-round service and delivered to your door. I signed up for the medium box of produce. I did not really customize it; I just got what they recommended for a family of five who cooks and eats in often.
We ordered the box on a Monday and received it at our doorstep on Thursday afternoon.
Opening up this crate was like opening presents on Christmas. You know you are getting something, but you’re just not quite sure what.
We received a good mix of vegetables and fruit.

I decided straight away to have my intern peel all the carrots. We laid them out and the kids ate the entire bag that afternoon.
There was plenty of fruit in smaller sizes, perfect for lunch boxes or a snack. Some great “exotic” vegetables for our palette included cremini mushrooms and baby bok choy. We also received cauliflower, onions, garlic, new potatoes and lettuce.
I made an Asian-inspired soup with the bok choy and mushrooms. It was delicious and simple.

Asian-inspired Chicken Noodle Soup
Ingredients
- 1 head baby bok choy chopped
- 1 large handful cremini mushrooms sliced
- 1/2 cup diced green onion
- 1 cup sliced carrots
- 1 cup sliced celery
- 2 cups cooked chicken shredded or diced
- 1 cup angel hair pasta
- 6 oz. chicken broth
- salt and pepper to taste
Instructions
- In a soup pot, saute mushrooms, onion, carrots, and celery until transparent, about 3 to 5 minutes.
- Add chicken broth and bring to a boil.
- Turn the heat down to simmer.
- Add cooked chicken and pasta.
- Simmer for 3-5 more minutes and serve.
After the soup for dinner, we enjoyed mangoes, pears and grapefruit for dessert.
So after Day 1, we had made quite a dent in the produce box. We went on to eat the lettuce in salads that week. The apples and pears were perfect for lunches and snacks.
Verdict: I will be signing up for this service. The produce was great, but more than that, it made my family interested in eating it.
