Apple Pie Bars

  • 4 1/2 sticks of unsalted butter, room temperature
  • 1 cup of sugar
  • 1/2 cup brown sugar, lightly packed
  • 2 tsp pure vanilla extract
  • 4 cups all-all-purpose flour
  • 1 tsp kosher salt
  • 1/2 cup chopped pecans
  • 2 tsp ground cinnamon
  • 6 large granny smith apples, cored and sliced 1/8 inch thick
  • 2 tbsp fresh lemon juice
  1. Preheat the over to 375.
For The Crust:
  1. Place 4 sticks of butter, 3/4 cup sugar, brown sugar, and vanilla in the bowl of an electric mixer. Beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together, with the mixer on low, slowly add the flour to the butter mixture. Beating until combined. Press 2/3 of the dough in a 9x13 baking pan on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 minutes, until the crust is golden brown, set aside to cool.
  2. Meanwhile, add the pecans and cinnamon to the remaining dough and mix until combined.
  3. Reduce oven to 350 degrees.
For the filling:
  1. In a large pot over medium heat, melt 4 tbsp of butter. Add the apples, 1/4 cup of sugar and lemon juice. Simmer over medium-low for 12 minutes. Spread the apples evenly over the crust.
  2. Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be fully covered). Bake the 25 to 30 minutes until the topping is browned.
  3. Cool completely and cut into bars.
