Recipe: BBQ Turkey Meatloaf

Ingredients
BBQ Glaze:
  • 2/3 cup ketchup
  • 1/3 cup coconut sugar
  • 1 1/2 TBSP apple cider vinegar • 1/2 tsp Dijon mustard
Meatloaf:
  • 1 TBSP olive oil
  • 1 cup minced yellow onion
  • 3 cloves minced garlic
  • 1 1/4 tsp salt
  • 3/4 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 1/2 TBSP Worcestershire sauce
  • 1 1/2 TBSP Dijon mustard
  • 2 large eggs
  • 1/4 cup BBQ glaze (from above recipe)
  • 2 lb ground turkey
  • 3/4 cup almond flour
Instructions
  1. Whisk together ingredients for the glaze in a bowl and set aside.
  2. Heat olive oil in a skillet over MEDIUM and sauté yellow onion and garlic, stirring
  3. occasionally, until soft, about 6-8 minutes. Set aside to cool.
  4. Combine salt, pepper, smoked paprika, dried thyme, Worcestershire sauce, Dijon mustard,
  5. eggs, and 1/4 cup BBQ glaze in a large bowl. Mix in ground turkey, almond flour, and
  6. cooked onion and garlic. Mix until fully combined.
  7. Preheat oven to 350°F. Transfer the meat mixture into two even piles on a foil-lined baking
  8. sheet. Shape into two long loaves about 1 1/2 inches high x 4 inches wide. Spread remaining BBQ glaze over loaves, letting it drip down the sides. Bake for 40-45 minutes, or until meatloaf reaches 165°F.
