Silo Brussels Sprouts Recipe

Silo is known for great farm-to-table food with a Southern emphasis. These Brussels sprouts are a great example of food that always hit the spot.
  • 2 pints Brussels sprouts, halved
  • 3 ounces diced bacon
  • 1 shallot, sliced
  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1 knob unsalted butter
  • Salt and pepper
  1. Preheat the oven to 325 degrees.
  2. Place the Brussels sprouts on a rimmed baking sheet and roast in the oven for 20 minutes.
  3. Heat a skillet and add the bacon.
  4. When the fat is rendered, add the roasted Brussels sprouts and shallot.
  5. Saute until slightly brown.
  6. Deglaze the pan with the cider and vinegar.
  7. Add the knob of butter and reduce the liquid by half.
  8. Season to taste with salt and pepper.
