Whipped Almond Butter

We completely messed up this recipe to great results. Thus, don't let the fact that you are making butter intimidate you. Our blender was broken, and we still used these same ingredients and had the yummiest of spreads. You can't go wrong.
  • 1 cup almonds, toasted (just put in a hot skillet and move the almonds around until they are aromatic)
  • ¼ cup honey
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cinnamon
  • ½ cup heavy cream
  • Salt
  1. Chef Coins says, "Place the roasted almonds and honey in a blender and blend. Add the cayenne and cinnamon. While blending on medium setting, slowly add the cream until the almond puree turns light and fluffy."
Okay ... we did this completely wrong. Our blender wasn't working and we only have a food processor and a Ninja high-powered blender (for smoothies). We also weren't paying attention, and we put all the ingredients at once in the Ninja and then added a little more cream. It turned into a spread, which I'm sure was not nearly as good as intended. But oh my, we really liked it. It was used for this seared broccoli recipe and then spread on hearty bread all week long. It was used on a vegetable sandwich instead of mayo ... our mistake was delicious, so just know that using this combination of ingredients correctly, or completely incorrectly, will have yummy results.
