Before our early fall mornings turn into cold winter days, here is a recipe for a delicious and healthy breakfast smoothie that I have been loving lately. It is perfect for when you’re on the go, but sometimes I pour it into a bowl and eat it like a cold soup! I have seen some recipes that have you “soak” your oats overnight or cook them before adding them to the smoothie, but I think that is just an extra step that isn’t needed.
- 1 Frozen Banana
- ¼ cup of old fashioned oats
- 1 tablespoon of peanut butter (or any nut butter)
- ½ cup of milk
- vanilla extract
- a sprinkle of granola or any cereal on top for a little bit of crunch
- Place all ingredients into a blender and mix on high speed until smooth and creamy.
My tip for freezing bananas: peel each banana and wrap them individually in wax paper. Throw them in a ziplock bag and pop them in the freezer. When you need a banana just pull one out!
