My sister and I were together this weekend and a familiar topic came up, ” Why do so many kids now have peanut allergies?” We tried to think of one person we knew growing up with any kind of allergy and came up empty handed. Maybe we were raised in a true middle class America (meaning if you had one, well, no one noticed), but we were hard pressed to remember anyone with an allergy.
It seems there are lots of theories and no real answers, but one thing I know for sure: it is a huge hassle to supply treats for birthday and class parties if a kid has an allergy of any type. Even harder is the mom who lives in fear that the other moms won’t remember (Liza actually can tell you a story of her oldest’s kindergarten teacher brushing the nuts off the top of a muffin and giving it to the child with a nut allergy…this was just four years ago! Needless to say, a trip to Vanderbilt ER ensued. Oh, the angst these parents face.) So, let’s face it, cut up oranges and apples lack a certain panache in the eyes of a kid. Admittedly, I am the first to grab the lard laden cake from Sweet ‘n Sassy and LOVE IT. I digress.
I love a passionate story and in my humble opinion, women are the most resourceful creatures on the planet. Hanging out at the pool in the 90 degree sweltering heat, I met Layne Pickett, one half of the brains & brawn behind Kateelayne Allergen-Free Bakery. Layne’s children had all sorts of allergies. With passion and commitment, she believed a carefree bakery was a worthy idea. If you believe in true karma and I do. Her neighbor, Kathleen Urciuoli, is a tried and true pasty chef. A match made in heaven. With passion and profession in hand, they started a allergen-free bakery.
Keep their website www.kateelayne.com on your radar screen. It is guaranteed you will need to supply some type of allergy free baked good sooner rather than later. Their sugar cookies are the most popular item. And just added but not yet listed online are the gluten free sugar cookies
I know so many people with gluten issues. Plans are for more products in the future! In addition, they have cupcakes, cinnamon rolls and five types of cookies, all allergen free of peanuts, tree nuts, dairy and eggs. The dedicated kitchen is both kosher and vegan. On top of all this, everything is incredibly tasty!
