Most of us have some left over corn, onions, barbecue, tomatoes and potato salad today. Many have a spare avocado or two from an overzealous purchase to make guacamole. So, what to do? Make these recipes and start enjoying July 5th just as much as we all enjoy the day after Thanksgiving!
Chicken BBQ Salad
In my opinion, this salad should be the main course on July 5th, as it’s so tasty and healthy! Remember that this recipe can be easily modified to accommodate whatever your leftovers are. If you had pork BBQ, substitute that for the chicken. If you have lots of black bean salsa left over, by all means throw it on!

Jalapeno Ranch Dressing
I find myself at Chuy’s entirely too often. Why? Their salsa and jalapeno ranch dipping sauce. (It’s really their dressing–just ask for it and they’ll bring you it for free). This duo is entirely addicting even for me, someone who is not that big a ranch dressing fan!
After trying a few times, I came pretty close with this recipe. It’s perfect for my post-July 4th salad. We smoke up a LOT of chicken wings on July 4th, so we always have extra ranch dressing around for days/weeks after. Of course, this year, the dressing served with the wings is actually going to be this one! So, using it on the salad is actually a repurposing of sorts.

Potato Salad Pancakes
There are always POUNDS of potato salad left over, right? And, hey, it’s great just the way it is, but why not reinvent it to add a little excitement to round 2?
The potato salad pancake can be served on the side of the salad or whip them up for breakfast and serve with a fried egg on top. Or, add to some breakfast burritos. Or, make Eggs Benedict and sub the English muffin for these pancakes instead!
The potato salad I used was mayonnaise-based, but I don’t see why it wouldn’t work with German potato salad as well. And, what about those recipes that call for pickles? I’d say try it, but keep to a lunch option, not a morning one… And let us know if that version is tasty, as we haven’t tried it yet!
For Potato Salad Pancakes:
- 2 pounds of potato salad (about 6 cups)
- 1 cup bread crumbs (panko style works well–you can leave your hotdog buns out over night as an option as well — my thought being that if you have leftover potato salad, you probably have left over buns, right?!)
- 2 eggs — you need this as a binder to keep the potato pancakes together when cooking
- ½ – 1 cup shredded cheddar
- Olive oil
- Sour cream to garnish
- Salt and pepper to taste
Mix all ingredients except oil and sour cream. Heat oil on medium high heat in large pan. Once hot, make patties about 4 inches across and cook for 2-3 minutes, flipping, or until lightly browned. Top with sour cream and enjoy!
