May is such a busy time of the year! There are end of school activities and sports teams finishing the season. There are a plethora of social events on our calendars and deadlines to meet. One of the ways I am simplifying and giving myself a break is picking up dinner on the go. There are wonderful places around town that have pre-made casseroles and dishes ready to pop in the oven.

Owned by two southern girls, Half Baked knows how to make a casserole! They prepare their casseroles using all natural ingredients and their meat is completely hormone and antibiotic free. The casseroles are frozen so it does require a little bit of thinking ahead. You can call ahead and have them pull out your selection to defrost. They also have a wonderful selection of appetizers, side dishes, and desserts.
I picked up the Skinny Tortilla Chicken which was chock full of chicken, veggies, and low-fat cheese. It had a wonderful spice and did not taste “skinny” at all. My husband said it remind him of a spicy chicken pot pie! I served the dish with a simple salad and avocado to round out the meal.

Lucy’s Market is a wonderful local store that has fruits and vegetables, breads, eggs, and a prepared food case with lots of options for lunch and dinner. Their pre-made dinner selections come from Simply Fresh in Marietta. The entrees are refrigerated and not frozen so you can pop them in the oven right when you get home.
My husband voted for the Chicken Picatta and Linguine. I was a little worried the noodles would be either too dry or too rubbery once with dish reheated in the oven. But, they were perfectly cooked and tasted delicious with the lemon juice, chicken broth, and capers. For a vegetable side dish I quickly sauteed green beans and mushrooms. We both thought the green beans and mushrooms added some needed nutrition and a little more flavor then if the Chicken Linguine was served by itself.
Multiple Atlanta location
With so many Zoe’s locations in Atlanta you are bound to pass one on your way home! Zoe’s makes it easy. Just choose one of the five “dinner for four” selections and call ahead (I called 15 minutes before picking it up and it was ready when I got there). I chose the Chicken Kabobs which comes with eight chicken kabobs, rice pilaf, greek salad, and pita bread. It was nice to have everything ready to go and everything was fresh and had wonderful flavor!

Not only does Sophie’s Uptown have fabulous desserts and serve a wonderful lunch. They have a great selection of frozen entrees to take home! I chose the Almond Chicken which has onion and celery along with chicken in a rich cream sauce. The dish was topped off with ritz crackers and slivers of toasted almonds which added a nice crunch. I served it along with a quick salad (do you sense a theme? it is always easy to do a quick salad!).
